Ingredients

  • 2 tbsp olive oil
  • 1 yellow onions, diced
  • 1 garlic clove, finely chopped
  • 2 cans diced tomato (about 400g each)
  • 1 red bell pepper, cored and diced
  • 1 tsp cumin
  • 2 tsp smoked paprika
  • 2 tsp sweet paprika
  • ½ tsp chili
  • 1 small bunch coriander
  • 4-6 eggs
  • salt to taste
  • ½ block feta

Instructions

  • In a large skillet, fry diced onion, diced paprika and spices in a bit of oil until onions are translucent. Then add diced tomatoes and salt and pepper to taste. Mix well and let it simmer for about 5 minutes while stirring occasionally.
  • Use a spoon to make little 'nests' in the red base, and carefully crack the eggs inside. Cover with a lit and let it cook for 2-3 minutes on low heat. Make sure the egg yolk stains runny.
  • Sprinkle over fresh cilantro and feta cheese and serve with grilled bread.
