But not only are these veggie fajitas delicious, they are also a great source of nutrition. The veggies and beans are high in fiber, vitamins, and minerals, making them a great addition to any diet. If you’re not looking to make this veggie version, or want to make different variations, you can very easily add chicken to this recipe. Simply fry it in some oil before adding onions, bell peppers and spices. You can also create some meaty texture by adding mushrooms to the mix.

Whichever combination of veggies and meat you choose, the mix of fresh ingredients cooked with Mexican spices gives these fajitas a flavor that’s hard to resist!

Our best (vegetarian) Fajitas!

Some nights call for indulgence, and this Fajitas recipe certainly does the job! It's easy to make, and although this recipe is vegetarian, you can easily adapt it to your taste and add meat of your choice. While toppings like sour cream, cheese and guacamole are optional, we highly recommend adding them!
It's rich in flavours with a hint of spiciness. Roll it up in a warm tortilla and dive right in!

  • 3 bell peppers any colour
  • 1 red onion
  • 1 can black beans
  • 1 pack store-bought tortillas about 8
  • sour cream, grated cheese, guacamole optional

Fajitas spice mix

  • 1 tsp salt
  • 1 tsp chili or cayenne pepper
  • 2 tsp smoked paprika
  • ½ tsp garlic powder
  • ½ tsp ground cumin
  • 1 tbsp cornstarch


  • 2 avocados
  • salt to taste
  • lemon juice from half a lemon
  • pinch of chili powder


  • Chop onion and peppers in thin slices, then fry them with some oil in a large skillet until soft. You can add a sip of water to accelerate the cooking process.
  • Once they start softening, add your spice mix.
    Let it cook another 5 minutes until the peppers are fully softened and add another sip of water if it becomes too dry.
  • In a small pot, heat up the beans. Add some salt and garlic powder to taste.
  • Warm up your tortillas in a pan or microwave.
    Fill them with your fajitas mix, beans, sour cream, cheese and guacamole


  • Mash 2 avocados, then add juice of half a lemon and add a pinch of salt and chili powder. Mix well & enjoy!
