Tomato Mustard Tarte

Got a random open jar of mustard in the fridge? Put it to use with this super simple and delicious tomato mustard tarte. We love tartes not only to switch up our dinner game from time to time, but also because they are incredibly easy to make. The plus: they look really nice and fancy. Enjoy this mix of tangy mustard with fruity tomatoes by itself, or with a side salad!

Ingredients

  • 1 crust (store bought tart crust, but you can also use puff pastry)
  • 4 tomatoes
  • 1-2 tbsp dijon mustard (not too spicy)
  • 1 tbsp Olive oil
  • 2 pinches salt
  • herbes de provence

Instructions

  • Pre-heat your oven to 180 degrees.
    Butter your mould to get a crunchier crust, or leave your pie crust on the parchment paper if you don't mind – both works! Lay the dough in your mould, press it to the mould and use a fork to poke a handful of holes in the crust.
  • Spread 1-2 tbsp of Dijon mustard on your crust. The whole surface of the dough should be covered by a thin layer.
  • Cut 4 juicy tomatoes in thin slices (about 3 mm). Place them on them all around, and sprinkle over herbes de provence, salt and olive oil.
    Bake at 180 degrees for 20 minutes.
