If your Instagram or TikTok feed looks anything like mine, rice cakes (or rice waffles) seem to make their way into all desserts. I see them in all shapes, forms, and flavours. Either kept in their shape and covered with chocolate and other goodies. Or crumbled into small bits and shaped into bars with fruity flavours, caramel, or chocolate toppings.

And they look delicious every single time, and I truly wish I could taste them all! So to start somewhere, we’ve put together these easy, healthy (or healthier?) rice cake Snickers bars.

How to make rice cake snickers

I can’t speak for all rice cake recipes, but this one is an easy one for sure. The Snickers flavour and influence mainly stem from the use of peanut butter. In this recipe, we kind of killed two birds with one stone (all birds remained unharmed in the process) because the peanut butter also builds the base for the caramel sauce.

In terms of ingredients, you only need some basic ones, most of which you may already have at home:

Step 1: Crumble the rice cakes into small bits. You can best do this by pulsing a food processor, or putting them in a bag and using a rolling pit to beat it until crumbled.

Step 2: Roughly chop the peanuts and add them to the crunched rice cakes.

Step 3: Combine peanut butter, maple syrup, melted coconut oil and a pinch of salt in a bowl. Whisk it for 2-3 minutes, and as air folds in, the texture thickens.

Step 4: Now mix 2/3 of your caramel mixture with the rice cake and peanut crumbs until they’re coated. Spread the mass in a mould lined with parchment paper (20×20 cm / 8×8 inch mould) and press it firm and flat.

Step 5: Pour the remaining caramel sauce on top. Now melt the chocolate, and also pour it on top.

Step 6: Let it set in the fridge for at least 30 minutes.

Are rice cakes healthy?

As with many things in life, it’s all a matter of perspective, and ‘healthy’ is very relative. We don’t talk about healthy food too much on this blog because health is made up of thousands of lifestyle choices, rather than one snack or treat choice. When thinking of healthy, you can either think of it in terms of calories or terms of nutrients.

In terms of calories, thanks to their puffed-up nature, rice cakes are essentially just rice and air, making them quite low in calories compared to the volume you get. However, this is also what doesn’t make them particularly nutritious.

Combined with a balanced diet and lifestyle, there’s nothing wrong with rice cakes or any foods, really.

Rice Cake ‘Snickers’ recipe

Ingredients

  • 6 rice cakes, finely crushed
  • 20 g peanuts, roughly chopped
  • 120 g smooth peanut butter
  • 40 g melted coconut oil
  • 60 g maple syrup
  • pinch of sea salt
  • 120 g dark melting chocolate

Instructions

  • Crumble the rice cakes into small bits. Roughly chop the peanuts and combine both in a medium bowl.
  • In another bowl, add peanut butter, maple syrup, coconut oil, and a pinch of salt. Whisk it for 2-3 minutes until the air folds in and thickens the sauce slightly.
  • Add 2/3 of the caramel sauce over your rice cake and peanuts and mix well. Pour it into your lined mold and press it firm.
  • Pour the remaining 1/3 of caramel on top and spread it.
  • Now melt your chocolate, and pour it on top.
  • Set it in the fridge for 30 minutes to harden.

Notes

Tip: for bite-sized pieces, you can also assemble these rice cake snickers in muffin molds.
