Freezing the mangoes not only gives the sorbet its creamy texture but also intensifies the sweetness of the fruit. The natural sugars in the mangoes provide a delightful natural sweetness without the need for excessive added sugar.

Honey not only aids the sweetness, but also gives the sorbet a rich, creamy texture

The addition of honey is necessary to get a creamy rather than watery sorbet. The sugar content helps to avoid water crystals from forming as the sorbet freezes. Honey also gives a subtle, natural sweeteness that beautifully complements the tropical flavours of the mango.

To make this recipe vegan, you can use sugar, maple syrup or agave nectar. You may need to reduce the quantities of sweetener to avoid it getting to sweet (for example, agave nectar is much sweeter per gram than honey). Simply give it a taste test.

A squeeze of lime juice for some kick

To brighten the flavors and add a zesty kick, fresh lime juice is squeezed into the sorbet mixture. The tangy lime juice provides a refreshing contrast to the sweetness of the mangoes and balances the overall taste profile. Its citrusy notes enhance the tropical flavors and make each spoonful of sorbet even more refreshing.
