The mix of apple and caramel sauce is a match made in heaven

The star of this cake is apples laying in a bed of homemade caramel sauce. You can easily whip up the caramel sauce in a matter of 5 minutes. Then, place the sliced apples on top. While the cake bakes, the caramel sauce and apples will melt into each other.

The cake batter is moist, tender, and bursting with warm flavors. The greek yoghurt is the secret to making the cake light, moist and spongy, the perfect made for the tender apples.

The cake is easier to assemble than you might think

To achieve the signature upside-down presentation, the caramel sauce are placed at the bottom, followed by the apples. You can then simply pour the batter on top and it will fill the gaps between the apples.

The caramel sauce gets hard very quickly, but don’t worry! In the baking process, it will melt with the apples and come out perfectly creamy from the oven. As the caramel sauce permeates the layers, it infuses the cake with its rich sweetness. Once baked and inverted onto a serving plate, the golden caramelized apples become a beautiful topping that will impress your guests.

Keyword: caramel apple cake
Servings: 1 22cm mould

Caramel sauce

  • 200 g sugar (white or brown)
  • 30 g butter (unsalted)
  • 1 tsp salt
  • 120 ml milk (half or full fat)

  • 2-3 apples (granny smith)
  • 60 g greek yoghurt
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 pack backing powder (about 4 flat tsp)
  • 1 pinch salt
  • 100 g flour
  • 60 ml oil (sunflower or other neutral tasting oil)
  • 60 g sugar

  • Prepare a round cake mould (22 cm) by covering the bottom with parchment paper and greasing the sides. Pre-heat the oven to 180 degrees.
  • Batter: In a large bowl, mix together yoghurt, eggs, sugar, vanilla extract and oil. Then add baking powder and salt, and gradually add flour while whisking the dough. Keep whisking the dough for 2-3 minutes until it reaches a silky texture. Set aside
  • Apples: Peel and core the apples, and cut each apple in 8 wedges. Place the apple wedges on top of the caramel layer all around.
  • Caramel sauce: For the caramel sauce, add all ingredients to a sauce pan. Let it sit on the stove for 4-5 minutes on low heat; it will make itself. Immediately pour it into the mould as it hardens quickly.
Place apples in circular form on top and pour batter on top.
  • Bake the cake for 35-40 minutes, and test with a toothpick whether it's done. Cover with foil if the cake gets too brown and the cake isn't done.
When done, let the cake cool for 10 mins, then flip it over to have the caramelised apples on top. Serve as is, or with a scoop of ice cream
