Every once in a while I get the urge to make healthier versions of recipes I love. It’s such a fun, creative, and experimental process and it’s incredibly rewarding if it turns out well. After some trial and error, this recipe is taste bud-approved and ready to feed the masses.

One thing we find important in healthy desserts is that they don’t actually taste healthy. A sweet tooth needs what it needs to be satisfied, and that is a sweet and rich dessert. And we can confidently say that these easy chickpea blondies are moist and rich in flavor and texture, just like a dessert should be.

To make this healthy blondie recipe, you’ll only need a few ingredients and a good food processor, most of which you may already have at home. Here’s a breakdown:

Ingredients

  • 400 g canned chickpeas, rinsed and drained
  • 60 g smooth peanut butter
  • 140 g maple syrup
  • 70 g oat flour
  • 4 tsp baking powder
  • 1 tsp cinnamon
  • 20 g chocolate chips
  • Optional: chocolate chips and pecan nuts to top

Instructions

  • Add all ingredients except the chocolate chips to your blender or food processor. Blend it for a couple of minutes until you have a smooth dough.
  • Add chocolate chips and fold them in.
  • Evenly spread the dough in your mold and decorate it with more chocolate chips and pecan nuts.
  • Bake them for 20 minutes on 180C (350F).
