Ingredients

  • white bread (baguette or regular, cut in half of sliced)
  • 2-3 ripe tomatoes
  • 1 garlic clove
  • pinch of salt (to taste)
  • 1 tbsp olive oil (and some more to grill bread)

Optional

  • fresh Burrata cheese
  • parsley to garnish

Instructions

  • Grate the tomatoes with your grater through the bigger holes until you're left with the peel and stem
  • Get rid of the excess liquid by putting the grated tomato in a sieve, then transfer them to a bowl and add in olive oil and salt
  • Drizzle some olive oil on the bread slices and grill them in a pan until golden brown. Then take have a garlic clove and rub the open side onto the bread
  • Spread tomato paste on top, sprinkle over parsley and spread over fresh, creamy burrata
